About Definido Branco 2019
The grapes that make up this wine come from different Sub-Regions of Dão, where the age of the vines is between 50 and 80 years. Many of these grapes come from monovarietal vines, but also from vines with a wide mixture of typical grape varieties from the region, such as Encruzado, Malvasia fino, Grape dog, Rabo de ovelha, Branda, Barcelo, Douradinha, among others.
As white grapes are more sensitive to diseases and because most of the aromas and their precursors are contained in the film, it was extremely important to ensure a perfect selection of the grapes in the vineyard, and thus guarantee the final quality of the wines.
Upon arrival at the winery, the grapes were again selected and sent by gravity to the pneumatic press. The purpose of this process was to gently extract your juice, to later send it to a thermoregulable vat, allowing the temperature to decrease and, naturally, to clarify the must.
After about 48 hours the wort was ready to ferment in French oak barrels. After many tastings and batch selections, we created the first wine from the WWW, the Definido Branco
1845 0.75 L bottles were produced
